Sweet Potato Casserole

3 c. cooked sweet potatoes, mashed

1 c. sugar

3 eggs, well beaten

1/2 c. cream (I use evaporated milk)

1 stick butter, melted

1Tbsp. vanilla (organic or pure)

Nutmeg honestly is an option. I do not use it but if you choose to use it 1/2 tsp.

Mix well; beat with mixer until smooth.

Topping:

1/2 c. light brown sugar

1/2 c. self-rising flour

1/2 stick butter

1 c. pecans

Mix well or until mixture is grainy. Bake at 350 degrees for approximately 30 minutes.

This recipe was a holiday, southern tradition when I was growing up. Why wait until Thanksgiving to have this for dinner? We have sweet potatoes in the Midwest so it doesn't have to be southern.

I serve this with lemon pepper green beans and tuna patties.
