Cilantro Pesto Dip
Who says you have make pesto with basil?
Cilantro isn't just for Mexican dishes. I love the taste of cilantro and this tasty herb is loaded with health benefits. It's fun to shake things up a bit at times. Don't you think? Now this is the part that amazes me. Not only can you use the seed (Coriander) to spice up a dish but check this out! This herb provides 15% of folates, 11% of vitamin B-6 (pyridoxine), 45% of vitamin C, 225% of vitamin A, 258% of vitamin K, 22% of iron and 18% of manganese.
1/3 cup walnuts
1 large bunch cilantro
1 garlic clove1/4 cup extra-virgin olive oil3 TABLESPOONS reduced fat sour cream (I always use fat free)
2 tsp. fresh lemon juice
1/4 tsp. salt
Roast walnuts either in your oven (275 degrees for 10 minutes) or on the top of your stove. I do the stove top. DON'T TAKE YOUR EYES OFF or THEY WILL BURN!!
Chop cilantro, garlic and walnuts in a Cuisinart Elite 12-Cup Food Processor , 25 seconds. While your Cuisinart is running, add oil in a steady stream. Add sour cream, lemon juice and salt. This will keep for 5 days in the fridge or freeze for 1 month. Enjoy!
