Gluten-Free Cinnamon-Raisin Bread

I can take just about any recipe and change it to fit a Gluten-Free diet. It is so simple. It is a matter of having things in your pantry. Starting with Bob's Red Mill White Rice Flour and Brown Rice Flour.

This recipe is simply simple and simply delightful.

Gluten-Free Cinnamon-Raisin Bread

1/4 cup canola oil

1/4 cup packed brown sugar

1 LG egg

1 1/4 cups Bob's Mill White Rice Flour

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1/2 cup raisins, rehydrated (You can also use dried blueberries or craisins)

1/2 cup milk (Almond milk works great)

1/4 cup applesauce

1/2 cup finely chopped pecans

1. Preheat oven to 350. Grease a 9x5x3 inch bread pan with nonstick cooking spray. For the batter, using a wooden spoon, stir together oil and sugar. Stir in egg. 

2. Add White Rice Flour, soda, baking powder and cinnamon. Stir to mix the ingredients but DO NOT OVERMIX. Stir in raisins, milk, applesauce and pecans.

3. Pour batter into pan. Bake for 35 to 40 minutes. Cool in pan. Slice and serve. 

Enjoy with butter or just like it is.
